Hi,
It's really helpful when hemming knits to use iron on hemming tape first. (Before you do this, make sure that the t-shirt can clear the head and shoulders at it's current width without stretching.) Once you hem the shirt with the iron on tape, you can then sew any type of stitch that you like and you will have a beautiful hem that will hold and never curl.
