Hi Diana - making cinnamon ornaments is something I always think about doing, and then never get around to it - until now. I made some just a few days ago and they turned out really cute & smell wonderful. Here is the recipe I used:

1 Cup cinnamon
1 TBS ground cloves
1 TBS nutmeg
3/4 cup applesauce
2 TBS white (Elmer's) glue

In medium bowl, combine cinnamon, cloves & nutmet. Add applesauce & glue; stir to combine. Work mixture with hands 2-3 minutes or until dough is smooth & ingredients are thoroughly mixed. Divide into 4 portions. On floured surface, roll each portion to 1/4" thickness. Cut dough with floured cookie cutters in desired shapes. Using a straw or toothpick, make a small hole in the top of the ornament. Place cutouts on wire racks and allow to dry at room temperature for several days (or dry them in a dehydrator). Thread ribbon through hole in ornament. DO NOT EAT (duh!). Makes about 32 (2") ornaments.
I did have to add a little more applesauce to get the dough to hold together good, and I used plastic gloves so I could really mix it well without making a mess of my hands. Also, I didn't use flour on my counter - I rolled it between 2 sheets of waxed paper, and I dusted my cookie cutters with cinnamon instead of flour. I did this on Sunday, and let them air dry. Today is the first day that they really felt completely dry and hard.
I was worried about the cost since cinnamon can be expensive, but I lucked out & found 9 oz. jars at my Dollar Tree, so you might want to check dollar stores in your area.
I only cut star & moon shapes and think I am going to brush the tops with a coat of clear glitter paint just to give them a little extra "bling". Anyway, they smell delicious & I will definitely do it again.
